Add 1 ½ cup milk, 2 tablespoons plain Greek yogurt, ¼ stick melted butter, 1 egg, and ½ tsp vanilla extract in a mixing bowl.

Take a whisk or a fork and mix all these ingredients together until they are well blended. You want the mixture to be smooth without any lumps.
In a separate bowl, which can be smaller, add ¼ cup sugar, 1 ½ cups flour,1 tablespoon baking powder, and pinch salt.

Use a spoon to gently stir these dry ingredients together. Now, slowly pour the dry mix into the bowl with the wet mix.
Grab your whisk again and gently stir everything together until you have a smooth, thick batter. Make sure there are no lumps left.
Take a plastic baggie and fill it with your pancake batter. If you have a Ziploc bag, or squeeze bottle they work perfectly.
Snip a small hole at one corner of the bag. This is where your pancake batter will come out.
Place a frying pan on the stove and turn to medium heat. (or use a griddle)
Add about 1 tablespoon of butter to the pan and let it melt. This will prevent the pancakes from sticking.
Hold the baggie with the hole you cut and squeeze gently to let the batter flow out.
Move your hand in a back-and-forth, zig-zag motion over the pan. This will make thin, ribbon-like strips of pancake batter.
After about 30 seconds, carefully use a spatula to flip the pancakes over.
Cook the other side for about 20 seconds until they're lightly browned.
Continue making more pancake strips by repeating steps 6 and 7 until you've used up all your batter.
Get creative! You can add fruit, chocolate chips, or any other toppings you like on top of your pancakes.
